Another 10pm cook up

Only my husband would waste Fillet Steak... Lets just say my hubby's diet is, well severely lacking in nutrients.  I can't change him after 19 years together. I had to run out of the house after my own evening meal last night.  Then when hubby came home he didn't cook his piece of fillet steak I'd left in the fridge for him.  Then tonight again it was still in the fridge. So, at 10pm I thought 'Bugger it, I'll chuck it a pan with some stuff' While throwing it together I had visions of all those times I whinged and moaned about how hard it is to find things to cook and then cook them. Tonight, I proved myself wrong. Here you go (no amounts sorry) Heat some olive oil in a pan, add your cut up meat of choice. When cooked I threw in chopped carrot, spring onion, celery and broccoli (including stalk) Cook for a few minutes then add bone broth, passata, lentils, smokey paprika, thyme, teaspoon rice malt syrup, salt and pepper.  Cook do...

Mango Lemon Nut Slice This one is a total throw together and in my true style, I didn't really measure all ingredients. BUT, I did do a rough recipe for those that would like to make it. My Meyer lemon tree was calling to have the lemons picked and used in cooking.  The fruit was pretty small but they were jam packed with pips (this was around 10 small lemons). For the base I was wanting mainly nuts for the added protein so I cooked off some pecans and almonds in the oven.  I would only put them in for around 10 minutes on 160 degrees celsius fan forced. Recipe Ingredients Base: 1 1/2 C Almonds 2/3 C Pecans 1/3 C LSA 1 C Dates Drizzle or even a glug of 100% maple syrup 1/2 C Almond Meal 1/2 tsp Vanilla extract 1/4 tsp Cinnamon 1 tsp lemon zest 1/2 C Coconut Oil Topping: 2 C Mango (Fresh or Frozen) 2 large eggs plus an extra 2 yolks 2 Tbs Butter 1/4 tsp vanilla extract 1/4 C Lemon Juice 1 tsp lemon zest Flaked Almonds...

LOVE Chocolate & Mint combos

Mint Choc Brownie Bars I'm aiming to fill the freezer with loads of these home-made goodies that are great for you but feel like your having a treat. I have no idea what Larabars are but anything with chocolate and mint gets my vote. Recipe for Mint chip brownie Larabars here When using dates I usually give mine a quick soak in boiling water before putting them in to process. This recipes is as easy as chucking all ingredients in to your processor and zshooming (Little Miss's term for it) away. Then when it resembles a ball, rolling it out and cutting it in to squares or rectangles and popping it in the fridge. Then once chilled I transfer it in to a a container with baking paper sheets between in to the freezer so you can grab some any time.

 Paleo Pumpkin Bars So delicious and no sugar in sight! Following on from my earlier post where I made almond butter, here is the recipe that I needed it for. I was sceptical of how this recipe would turn out but once out of the oven it was obvious it was going to be great.  Miss 4 went in for seconds and Miss 18 even had a piece. Full of great stuff like; pumpkin, banana and nuts, it is nutritious and delicious. The pantry & Home-made almond butter

The Pantry I think I've started another obsession, pantry organisation. Always driven by perfection, I found myself searching for jars to put my wholefoods in, in the pantry.  These I found at Kmart yesterday and have already been back for more today. Priced from $2 they are a great price and look great. Almond butter A lot of clean cooking recipes call for almond butter and I didn't have any in the cupboard for a recipe I'm going to try.  I recalled seeing a post on making your own and so did the usual google search and found one. It's actually as basic as cooking your raw almonds in the oven and then processing them.  The oils will release as you go due to heating up of then oils.  It took around 10 minutes of processing to get this result. I'm making Paleo Pumpkin Bars with it, so stay tuned.

Potato masher v's egg

Eggs!!!! Depending on the size, they can be around 6grams of protein each.  As they say, 'if you have eggs, you have a meal' and can be so versatile.  Breakfast, lunch, tea or just a snack. Since bypass I can just fit 2 on a salada in (curried of course) but I love them poached with bacon and hollandaise on the side.  spinach, tomato and mushroom too but I never have enough room and right now mushrooms don't agree with me. 2 things annoy the shit out of me about eggs, peeling them and mashing them. Here's tonight carnage. I've read all the tricks to shelling them and it never works.  Once boiled, I drain and add cold water and ice but it NO.  I've tried the glass of water and shake thing too. The other thing I get annoyed about is mashing them.  Until tonight I've been mashing them with a fork and it frustrates me.  While thinking about forking them I had visions of a fancy cutting thing I've seen for eggs and thought next time ...

Finding a good yoghurt

My favorite yoghurt to date Until I got the facts about yoghurt I had no idea just how many additives and sugar were in them.  FYI, yoghurt should only be Whole milk and cultures.   So this one from Aldi is a my fav although there is milk powder in it. I know many people aren't fans of natural yoghurt for its tartness but I think it takes time to get used, especially if you are used ones with sugar added. One thing I also believe in, is to have full fat foods (except milk for me, as I can't tolerate full cream milk).  I don't buy low fat/sugar free or diet because they are basically a chemical shit storm and/or they are high in sugar. I know I had and still to a degree have my blinkers on when it comes to food and convenience.  Just have a look at the ingredients on the food you consume.   With yoghurt, you can your own fruit and goodies to it.  Just like my banana, yoghurt, almond and pepita bowl I make daily. Chocolate Crackles

Not the usual Chocolate Crackle Most of my cooking and baking is a 'chuck it in the bowl' affair.  This is one of them but worked a treat... To puffed rice, cranberries, LSA, flaked almonds, pepitas, sunflower seeds and raw cacao, I added rice malt syrup and melted coconut oil.  Once cooled a bit I added chopped dark chocolate. Then I baked for around 15 minutes in a moderate oven.

Natural yoghurt and banana yumminess Breakfast, desert or a snack, this little beauty is packed with goodness. It is simply Natural yoghurt and banana in a bowl.  Then I plop a little butter in a small pan, toss in some almond flakes and pepitas.  Brown off a little and then tip a small gulp of 100% maple syrup in to caramelise off (a few seconds).  Sprinkle over the yoghurt and banana and enjoy. I'm actually about to whip this one up.

A few of my recent Pinterest finds for you Strawberry & Chia Jam is super yum on sour dough toast.   Grab the recipe here Vego Lasagne I adapted this scrummy lasagne for low FODMAP (I can have have lactose) but not putting garlic in and using spring onion instead of onion.  I also added a can of tomatoes to the lentil and pumpkin layer and sprinkled parmasen cheese on the ricotta layer. Recipe here I had too much of the lentil layer so the next day I created this pizza by splodging the lentil layer on pita bread along with spinach leaves, ham, sun dried tomatoes, pine nuts and 3 cheeses.

Vego pizza with out additives I'm obsessed with food.  Not like the old me (pre gastric bypass surgery), where my mind would tell me a load of shit.  Like; Eat that block of chocolate, you REALLY need a piece of chocolate cake and why not eat half a packet of chocolate biscuits. I wasn't an over eater, but what I ate was mainly processed and contained lots of sugar.  I would binge on sugar and then feel like my heart was racing. Now that I know my intestinal bacteria is made up of a SHYTE load of little dudes that are small versions of the old me that crap out lactic acid, I'm doing all I can to reduce them. Tonight's tea for us 3 girls (Bossman arrived in time to share but much prefers a pizza in the frozen form), was these colourful pizza delights. I pulled out my newly acquired secondhand bread maker and got busy getting a dough going in it. Then I oven roasted butternut pumpkin and capsicum in red, green and yellow.  Due to not tolerating FODMA...
