LOVE Chocolate & Mint combos


Mint Choc Brownie Bars



I'm aiming to fill the freezer with loads of these home-made goodies that are great for you but feel like your having a treat.

I have no idea what Larabars are but anything with chocolate and mint gets my vote.


When using dates I usually give mine a quick soak in boiling water before putting them in to process.
This recipes is as easy as chucking all ingredients in to your processor and zshooming (Little Miss's term for it) away.
















Then when it resembles a ball, rolling it out and cutting it in to squares or rectangles and popping it in the fridge.




Then once chilled I transfer
it in to a a container with baking paper sheets between in to the freezer so you can grab some any time.

Berry Harvest Cake Would you believe this cake started out as blueberry pancakes? I had a hankering for pancakes so I whipped up a batch of wholemeal blueberry batter. As it was only myself and Miss 4 home, there was plenty of batter left so instead of wasting it, I turned it into this lovely moist cake. Ingredients 1 1/2 C Wholemeal Self Raising Flour 1/3 C Flaxseed meal 1 tsp baking powder 1/2 C Rice malt syrup 1/4 C Coconut sugar' 3 Lge eggs 2/3 C Milk 1/2 C Melted coconut oil 200gm Fresh Blueberries 3/4 C Mixed Berry & Chia Jam  (Recipe here. I sub the maple syrup for rice malt syrup) Topping - sprinkling of coconut sugar and oats Method Place all ingredients except the blueberries and jam in a mixing bowl. Additives

Additives are in everything!! Now that the blinkers are off as far as what food my family and I consume I've become shocked at just how many additives are foods that you wouldn't expect there to be.   I'm not becoming fanatical about all of this (some may disagree) but really it's bullshit that we as consumers aren't in control at all.  Personally I started looking in to petro chemicals etc years ago but more exposure is needed to help raise peoples awareness. Life is so busy these days and convenience plays a huge role in the choices we make. Until recently I struggled to work out what to cook for tea and it became a tiresome affair with no help what so ever from my family members.  I'd ask 'What do you want for tea?' and the responses I got went along the lines of; 'I dunno', 'What evers goin' and even 'Don't worry about me'  (that is my hubby to a 'tea').  We even joked about creating frozen meals called ...

Raw Mint Bites
