Blueberry Oat Natural Yogurt Muffins with my twist
I found a great recipe using some of my favourite ingredients on Running with spoons for Blueberry oat greek yogurt muffins BUT in my true style I amped it up a bit with some extra protein.
Here is my adapted recipe:
- 1 cup (120 g) wholemeal flour
- 1 cup (80 g) rolled oats
- 1 1/2 tsp baking powder
- 1/4 C LSA with added flaxseed
- 1/2 C Almond flakes
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 2 large egg
- 1 cup (225 g) plain natural yogurt
- 1/4 cup (80 g) Rice Malt Syrup (you can use honey also)
- 2 Tbsp (24 g) coconut sugar
- 1/4 cup (60 ml) unsweetened almond milk (or milk of your choice)
- 2 tsp vanilla extract
- 1 cup (140 g) blueberries, frozen or fresh
Follow the recipe for method with the added ingredients and voila, healthy and nutritious muffins.
