Blueberry Oat Natural Yogurt Muffins with my twist


I found a great recipe using some of my favourite ingredients on Running with spoons for Blueberry oat greek yogurt muffins BUT in my true style I amped it up a bit with some extra protein.
Here is my adapted recipe:

  • 1 cup (120 g) wholemeal flour
  • 1 cup (80 g) rolled oats
  • 1 1/2 tsp baking powder
  • 1/4 C LSA with added flaxseed
  • 1/2 C Almond flakes
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large egg
  • 1 cup (225 g) plain natural yogurt
  • 1/4 cup (80 g) Rice Malt Syrup (you can use honey also)
  • 2 Tbsp (24 g) coconut sugar
  • 1/4 cup (60 ml) unsweetened almond milk (or milk of your choice)
  • 2 tsp vanilla extract
  • 1 cup (140 g) blueberries, frozen or fresh

Follow the recipe for method with the added ingredients and voila, healthy and nutritious muffins.
