Strawberry, Coconut & Cashew Freezer Treats


Strawberries are selling for around $1.50 a punnet right now and they are a favourite in our house.
It wouldn't be crazy to see me with 6-8 punnets in my shopping trolley right now.

Recipe

2 C Cut up Strawberries
1 C Cashews (either soaked in water over night or sat in boiling water for 10 minutes)
1/2 tsp vanilla extract
2 T Rice Malt Syrup
Dark Chocolate for coating

Method

Make your coconut cream as link above and put aside.  Blend up your cashews until smooth and put aside.
Now blend up your strawberries for a few minutes then add the coconut cream, cashews, rice malt syrup and vanilla extract.
Blend until fully combined and then put mixture in the fridge to chill.
Once chilled I put the mixture into a piping bag with a large circular tip.  Pipe your mixture in to fairly flat circles on to baking paper.  I did 2 circles up.


Now put them in the freezer to fully firm up.  
For the chocolate coating I used some 70% and some 85% dark chocolate.  I melted mine on the stove with the chocolate in a bowl on top of a saucepan with water in it.
Once fully melted (stirring often) take the bowl off the saucepan and set it aside to cool.  Allow the chocolate to almost completely cool, then dunk your frozen discs in to follow cover them.  Sit them on baking paper and freeze once all are coated.
Keep these treats in the freezer to grab a couple out for a quilt free treat.
