Ginger Snaps


I found this recipe on the Golden Barrel website but I subbed the molasses for Rice Malt Syrup.


  • 1/4 cup Coconut Oil melted
  • 3/4 cup Coconut sugar
  • 3 tbsp Rice malt syrup
  • 1                           Egg
  • 1 1/2 cups Almond flour
  • 6 tbsp Coconut flour
  • 1 1/2 tsp Ground ginger
  • 1/2 tsp Salt
  • 1 tsp                        Baking soda

I cooked for a little longer but reduced my heat to 150 degrees fan forced and they came out perfect with chewy insides.
Great biscuits for those not wanted a hugely sweet biscuit.
