Roast Veggie & Spinach Lasagne Ok, the pictures doesn't look the best but you have believe me when I say this is scrumptious. I once again just put it together myself and I apologise for not have accurate amounts. Ingredients Sauce:Approx. 500mls of Napoletana sauce (mine is home made using canned tomatoes, roast capsicum, spring onion, passata, tomato paste, mushrooms but you can used jars) Cheeses: grated tasty, parmigiano reggiano, goats feta and bocconcini Roast Veggies: I used pumpkin, zucchini, asparagus, sweet potato, capsicum and egg plant. All roasted and cut into small slices or chunks. Spinach layer: In a blender add 2 eggs, a tub of ricotta cheese, 2/3 C parmigiano reggiano, 1/2 bocconcini, sprinkle nutmeg, whole bag of baby spinach leaves, 4-6 spring onions chopped up.
