Biscuit Base Recipe

Biscuit Base Recipe I eat quite often during the day (and night) due to having gastric bypass and trying to get enough nutrients in. This biscuit recipe is a staple in my house and allows for you to vary what you add to it. Ingredients Base Recipe 1 3/4 C Wholemeal Self Raising Flour 2 Lge Free Range Eggs 1/3 C LSA & Flaxseed added. 1/2 C Coconut Sugar 2 Tbs Maple Syrup or Rice Malt Syrup 1 tsp Vanilla Extract 180g Melted Butter (you may need more depending on what else you add) Additives: Chocolate:  Add 1/2 C Cacao powder, 2Tbs Maca powder & dark chocolate chips Fruit: Add 3/4 C Mixed Berry & Chia jam, 1/2 C dehydrated blueberries, citrus zest, 1/2 C almond flakes. Fruit & Nut: Add 3/4 C Cranberries & 3/4 C nut of your choice (pecan is lovely) Nut: Add up to a cup of nut/s of your choice. Citrus: Add 2 Tbs fruit juice (orange, lemon), zest and almond flakes. Roast Veggie & Spinach Lasagne Ok, the pictures doesn't look the best but you have believe me when I say this is scrumptious. I once again just put it together myself and I apologise for not have accurate amounts. Ingredients Sauce:Approx. 500mls of Napoletana sauce (mine is home made using canned tomatoes, roast capsicum, spring onion, passata, tomato paste, mushrooms but you can used jars) Cheeses: grated tasty, parmigiano reggiano, goats feta and bocconcini Roast Veggies: I used pumpkin, zucchini, asparagus, sweet potato, capsicum and egg plant.  All roasted and cut into small slices or chunks. Spinach layer: In a blender add 2 eggs, a tub of ricotta cheese, 2/3 C parmigiano reggiano, 1/2 bocconcini, sprinkle nutmeg, whole bag of baby spinach leaves, 4-6 spring onions chopped up.  Whiz it all up so its lovely and green and mixed well. Berry Harvest Cake Would you believe this cake started out as blueberry pancakes? I had a hankering for pancakes so I whipped up a batch of wholemeal blueberry batter. As it was only myself and Miss 4 home, there was plenty of batter left so instead of wasting it, I turned it into this lovely moist cake. Ingredients 1 1/2 C Wholemeal Self Raising Flour 1/3 C Flaxseed meal 1 tsp baking powder 1/2 C Rice malt syrup 1/4 C Coconut sugar' 3 Lge eggs 2/3 C Milk 1/2 C Melted coconut oil 200gm Fresh Blueberries 3/4 C Mixed Berry & Chia Jam  (Recipe here. I sub the maple syrup for rice malt syrup) Topping - sprinkling of coconut sugar and oats Method Place all ingredients except the blueberries and jam in a mixing bowl. Slowing beat the mixture up on a low setting until combined and then faster for 2-3 minutes.  If you find it too dry add some more milk or if too dry ad some more flour. Cacao Marshmallows for the SWEET Tooth

Cacao Marshmallows  I usually have a sweet tooth but these were too sweet for me.  If I make another batch I would cut down on the rice malt syrup and maple syrup for sure. I adapted the recipe from The Movement Menu  here I swapped the honey for rice malt syrup but only used 2/3 of a cup and I added 2 drops of Wild Orange oil from Doterra.
