Muesli Making Day

Homemade Muesli Quality muesli filled with nutritious ingredients can get very expensive but once you have the ingredients in your pantry, it becomes less expensive and you can customise it just how you like it. For the base I use this recipe  to amp up my oats. I sub the peanut butter for almond butter and I add 1/2 of LSA with flaxseed and 2 Tbs of coconut oil to my mix. Then you just add what you like.  I add cranberries, pepitas, sunflower seeds, almonds chopped and flaked and rice puffs. Guaranteed to taste delicious and keep you feeling full for longer.  My favourite breakfast/ snack is this with organic natural yoghurt.

Link to the original recipe at Ferns & Peonies Spearmint thin raw slice (on the right) Ingredients: Base 1 C raw almonds 1 C Medjool dates 1/4 C Raw Cacao powder 2-3 drops Doterra spearmint oil 3 Tbs coconut oil, melted Top layer 1/4 C Coconut oil, melted 1/4 C Cacao powder 1 Tbs Pure maple syrup Optional drop of spearmint oil   Directions: In a food processor, blend the almonds 10-15 seconds until you are happy with the consistancy. Add the rest of the base layer ingredients, except the coconut oil, and process another 10-15 seconds to combine. Add the coconut oil and pulse a few more seconds to moisten the mixture. Between 2 layers of baking paper, roll out your mixture until it is to the size of the pan.  Remove the top layer of baking paper and place tray in the freezer or fridge. Warning!!! You will want to eat this until every last crumb is gone.... This one is certainly not additive free given I used store bought puff pastry but it is refined sugar free.   LEMON CREAM CHEESE PUFF PASTRY BRAID  is the basic recipe I used.  I swapped the icing sugar for Rice Malt Syrup and used my home made lemon curd. Then I got a bit excited and made one with my home made Berry & Chia Jam and then the third one I used the cream cheese mix, layered banana on top and then sprinkled my almond flake, pepita, butter, maple syrup and LSA pan fried mix on top. All three were scrumptious.

Blueberry Oat Natural Yogurt Muffins with my twist I found a great recipe using some of my favourite ingredients on Running with spoons for  Blueberry oat greek yogurt muffins  BUT in my true style I amped it up a bit with some extra protein. Here is my adapted recipe: 1 cup (120 g) wholemeal flour 1 cup (80 g) rolled oats 1 1/2 tsp baking powder 1/4 C LSA with added flaxseed 1/2 C Almond flakes 1/2 tsp ground cinnamon 1/4 tsp salt 2 large egg 1 cup (225 g) plain natural yogurt 1/4 cup (80 g) Rice Malt Syrup (you can use honey also) 2 Tbsp (24 g) coconut sugar 1/4 cup (60 ml) unsweetened almond milk (or milk of your choice) 2 tsp vanilla extract 1 cup (140 g) blueberries, frozen or fresh Follow the recipe for method with the added ingredients and voila, healthy and nutritious muffins.
