Lemon Bakewell Slice  The recipe is an old favourite of mine that my Mum would make when we were growing up, except she would use jam.  The recipe she used was from a Mother's Club School Cookbook. Base 125 gm castor sugar 125 gm butter I egg Vanilla essence Jam Topping 1 C Coconut I Egg 1/2 C sugar When I first made up the no refined sugar lemon curd ( recipe here )I had it in mind to use it instead of the jam as I had seen done years ago. I adapted the recipe and here it is: Cream 125 gm of softened butter with 125 gm of Rice Malt Syrup.  Add one egg and a 1/2 - 1 tsp Vanilla extract depending on is concentrated.  Once thoroughly mixed, sift in 80 gm green banana flour & 130 gm Wholemeal flour. Due to using a smaller amount of flours I found the mixture stickier than usual and did need a knife and a dose of patience to spread the mixture in to the lined pan. Another 'throw ingredients in a bowl recipe' - Lemon, Oat and Almond Jumbles

Lemon, Oat and Almond Jumbles Yes, I do have a sweet tooth and today I not only made these beauties but whipped up another sweet biscuit recipe. Recipe 2 1/2 C Oats 1 C Buckwheat Flour 3/4 C LSA with added Flaxseed meal 1/2 Coconut Sugar 3/4 Flaked Almonds 2 Lge Eggs Zest from 2 lemons 60ml Lemon Juice 1 tsp Vanilla Extract 125gm Butter 1/2 C or 2/3 C (for the sweet tooths) Rice Malt Syrup Method In a bowl place all of you dry ingredients, lemon juice and zest and eggs.  Combine all together. In a small saucepan place the butter, rice malt syrup, vanilla.  Bring to a a gentle simmer, allowing the mixture to bubble up (approx. 5mins).   Add this to the dry ingredients and mix thoroughly.  Spoon blobs of the mixture on to a tray lined with baking paper and bake for approx. 30 mins in a 150 degree fan forced oven (or 170 degree oven) until golden brown.

Strawberry, Coconut & Cashew Freezer Treats Strawberries are selling for around $1.50 a punnet right now and they are a favourite in our house. It wouldn't be crazy to see me with 6-8 punnets in my shopping trolley right now. Recipe 2 C Cut up Strawberries 3/4 Coconut Butter ( Click here to find out how to make coconut butter ) 1 C Cashews (either soaked in water over night or sat in boiling water for 10 minutes) 1/2 tsp vanilla extract 2 T Rice Malt Syrup Dark Chocolate for coating Method Make your coconut cream as link above and put aside.  Blend up your cashews until smooth and put aside. Now blend up your strawberries for a few minutes then add the coconut cream, cashews, rice malt syrup and vanilla extract. Blend until fully combined and then put mixture in the fridge to chill. Once chilled I put the mixture into a piping bag with a large circular tip.  Pipe your mixture in to fairly flat circles on to baking paper.  I did 2 c...

Choc Caramel Volcano Cookies If you saw my blog post on chocolate brownies where I used green banana flour, you would have read of some of the benefits of eating it. This recipe  from The Healthy Mummy website was the perfect opportunity to use it again. The recipe calls for 2 cups of Wholemeal flour and so I did 1 C wholemeal flour and 3/4 C Green Banana Flour (you need to use less). You could eat them naked or add the date and coconut cream topping.   Enjoy

Ginger Snaps I found this recipe on the Golden Barrel website but I subbed the molasses for Rice Malt Syrup. Ginger Snaps Recipe 1/4   cup   Coconut Oil   melted 3/4   cup  Coconut sugar 3   tbsp  Rice malt syrup 1                           Egg 1 1/2   cups  A lmond flour 6   tbsp  C oconut flour 1 1/2   tsp  G round ginger 1/2   tsp   Salt 1   tsp                        B aking soda I cooked for a little longer but reduced my heat to 150 degrees fan forced and they came out perfect with chewy insides. Chewy Banana Choc Chip Cookies

Chewy Banana Choc Chip Cookies If you haven't already, check out some of the great recipes that the healthy Mummy have on their website. This one is only 5 ingredients and you can use up those overripe bananas in your fruit bowl.  My mixture was a little wet, so I added 2 Tbs of LSA to it. I used my home made almond butter.  It is basically oven roasted almonds blended up until it resembles a thick, non oily peanut butter. Chewy Banana Choc Chip Cookies Recipe And the verdict is.... Yum, protein packed goodness that would go well with a cup of tea.
